I absolutely love Cheesecake! It brings back childhood memories growing up in the Bronx of New York. My mom used to always pick up a box of cheesecake for special occasions like birthdays & holidays! It was like having a special treat each time. Cheesecake is like experiencing a taste of home!
Ingredients for Cheesecake:
1 - 12 oz. pkg Vanilla Wafers
2 - 8 oz. pkg Cream Cheese Softened
3/4 - Cups Sugar
2 - Eggs
1 - tsp Vanilla Extract
Ingredients for the Topping:
Any fruit you want!!!
Preheat oven at 350?
Crush the 12 oz. package of vanilla wafers, then add 1 tsp
to the bottom of the cupcake liner.
Beat two 8 oz. packages of softened Cream Cheese, 3/4 cups of sugar, 2 eggs and 1 tsp of vanilla extract with a mixer until light and fluffy.
Fill each cupcake liner with the mixture until it is almost reaches the top.
Bake in oven for 15 minutes or until the middle is soft, so as not to crack.
Take out of the oven and let sit until cooled. Step 6:
Choose any fruit you desire and place into the refrigerator for 30 minutes to an hour.
Take out and ENJOY!!!
